These days, the craft of making cocktails can be easily compared to the art of cooking. Ingredients that come from local farmer’s markets or a garden, are the trend for those who take delight in the participation, and now drinking, organic and local food. It is no longer thought of as a chef-only territory.

Fall is a very exciting time for Essensia at The Palms Hotel & Spa. It marks the beginning of the South Florida growing season and the re-opening of many local farms which have been closed during the summer. Re-launching on Wednesday, November 6th, Signature Chef Julie Frans invites hotel guests and local visitors to attend complimentary weekly tours and tastings of the hotel’s Organic Garden. Join Chef Julie as she identifies the organic produce, herbs and greens in the garden and prepares tasting bites utilizing ingredients from the garden. Wednesdays, 5.00pm – November 6th through May 28th.
South Florida’s vegetable growing season is from October through May. Many vegetable farms are getting back into the swing of things right now, and many are gearing up for their CSA programs to relaunch. Although we support many farms in South Florida, Teena’s Pride, one of our Essensia farmer vendors, is unique in that they also offer a CSA program so that the general public can enjoy their produce at home.
Essensia Restaurant now offers a gourmet dining experience for guests to enjoy paleo friendly foods in our elegant atmosphere. Our September Miami Spice Menus offer several options that fall into the Paleo-friendly category and guests can simply request the Spice Paleo Dinner or Lunch menu from their servers. Coming in October, with the launch of our Fall-Winter Menus, paleo-friendly combinations will have a defined space within our mainstream menus.
