Chef Julie Frans served as the guest chef at the 1st TeenasPride CSA open house of 2013. Chef Frans served up three healthy and simple dishes using fresh ingredients from Teena’s farm. Here’s what Chef Julie whipped up at the open house:





Mediterranean Grain and Herb Salad
Serves 4-6
2-3 c prepared farro, quinoa, or couscous
¼ c cup fresh parsley leaves, chopped
¼ c fresh mint leaves, chopped
¼ c fresh dill, chopped
2-3 large tomatoes, seeded diced
1 cucumber, seeded and diced
½- 1 c crumbled sheep’s milk feta cheese
¼ c olive oil
Juice from 1-2 lemons
Sea salt to taste
Combine all ingredients and season to taste.

Kale Salad
4 servings (will have extra dressing)
4 oz sliced kale
2 oz dried cranberries or cherries
2 oz toasted pumpkin seeds
Enough yogurt-apple cider dressing to coat completely

Greek Yogurt- Apple Cider Vinaigrette
1 c Greek yogurt
¼ c lucini lemon olive oil
¼ c real apple cider vinegar
1 T honey

1 t whole grain mustard
Salt and fresh ground pepper
Whisk ingredients together. Adjust to personal preference on amount of vinegar.

Whole Wheat Pasta with Arugula Pistachio Pesto
4-6 servings
Cook 2 c Penne Pasta al dente
Make pesto (see below)
Combine pesto and drained pasta
Add 1/2ed heirloom cherry tomatoes

Arugula Pistachio Pesto
½ c pistachios
¼ lb arugula
1.5 c olive oil
Juice from 1 lemon
½ c parmesan (optional)
Salt to taste

Blend arugula, olive oil, and lemon first. Then add pumpkin seeds to thicken. Add honey and salt last and blend just enough to combine.
