On Wednesday, May 22, Essensia’s culinary team and Chef Julie Frans will host a special end of the growing season Garden Party benefiting the Environmental Coalition of Miami and the Beaches (ECOMB). Join the Garden Party for a special tour and tasting of Essensia’s Organic Chef’s Garden at The Palms Hotel & Spa. Space is limited and a suggested donation of $25 will be collected upon arrival. All of the proceeds will benefit ECOMB.

The Garden Party will begin in the sandy area in front of the garden’s entrance at 5:00 p.m. Chef Julie will identify the organic produce, herbs and greens in the garden and prepare tastings utilizing ingredients from the garden. Watermelon Gazpacho with Java Super Lump Crab, Avocado, Garden Basil and Toasted Pepitas by Signature Chef Julie Frans
Makes approximately 2 liters

Ingredients:
• 1/3 watermelon, cut in large cubes
• 2 green bell peppers, seeded and rough chopped
• 1 cucumber, seeded and rough chopped
• 3 garlic cloves
• 1/2 red onion
• 1/2 dozen green onions, tops and bottoms trimmed
• 1-2 serrano chiles or jalapenos (with seeds)
• 3/4 c olive oil
• 3/4 c white balsamic
• Leaves from about 6 stalks of garden basil
• Leaves from about 6 stalks of mint
• Salt and ground pepper to taste

Preparation:
Run ingredients listed above through blender in batches and blend until mostly smooth. Season gazpacho to taste when finished.

Plating:
Pour the gazpacho into individual bowls and top with layers the following ingredients:
• Spoonful diced avocado in lemon juice
• 4-5 small cubes watermelon
• ¼ oz java crab
• 1 T (or less) toasted pepitas
• Generous pinch lemon basil
• Maldon Salt

Ready to serve!

On Tuesday, April 30th, 2013 at 6:00 PM till 10:00 PM, Fertile Earth Foundation (FEF), a Florida based 501(c)(3) non-profit organization, best known for its composting and waste reduction initiatives, will host their 2nd Annual “Underground Miami” fundraising event along with The Miami Beach Chamber of Commerce to benefit the organization.

Fresh off their success with the Ladies of Manure 2013 Calendar, the ladies of FEF will get you to rethink all your waste with specially commissioned art installation made with, you guessed it, manure! “We want our community to remember that it’s not waste until we waste it. We love doing things with a twist,” said Lanette Sobel, FEF’s co-founder and Executive Director.
